I was using a Wustof Classic chef's knife to do everything in the kitchen, and wanted a set of "beater" knives that would provide some other functions, and also so I wouldn't yell at guests for mistreating the Wustof.I chose the Victorinox set over lower priced sets such as Chicago cutlery because nearly every knife in this set was rated #1 (over much fancier knives) by Cook's Illustrated.In fact, when Cook's Illustrated rated knife sets, I guess victorinox didn't have one available, and their recommendation was to buy a block and populate it with Victorinox models.
In a head to head comparison with the Wustof, the Victorinox chef's knife was a few ounces lighter, and the balance was more blade heavy.The Victorinox out of the box was as sharp as the Wustof, which is about halfway between professional sharpenings. that is to say, the victorinox is impressive right out of the box.The slightly different balance takes a little getting used to if you've been using big german steel all your life, but it's not bad.The victorinox has a great handle design and is better for two handed mincing.
The selection of the knives in this set is perfect.there are no useless knives to pad the number in the set, this has everything you'd need except a cleaver.It also offers a 10" slicer instead of the 8" slicer offered by chicago and other, cheaper sets, and has very good quality shears.
It's hard for me to think of these as beater knives now, until I remember the price.If I accidentally burn my place down and have to get new knives, I would probably just buy this set and not replace the Wustof, then maybe add in a cleaver and the 5" mini chef's knife from Victorinox.
These knives are an incredible value.
