(More customer reviews)When I first got it, it is indeed razor sharp, and the sushi rolls was easy to cut.After using it for long time, the edge eventually became dull (That is to be expected of any knife).I resharpened it back to razor sharp edge, and the sharpening process was considerably easier with this knife due to its geometry (flat on one side, and strong angle on another side).The most important aspect of "good knife" is that it does NOT rust after sharpening.This knife stayed rust-free, and sharp for long time (longer than my other knives).It can be sharp enough to cut through tomatoes easily (usually very difficult with non-serrated knives).I can't speak for the professionals, but I can highly recommend it for novice chefs like myself...:)
