(More customer reviews)I've owned this knife, along with a Wusthof Classic 8" inch chef's knife, for about 10 years.The Wusthof is more versatile and can be used for 90% of your cutting tasks.The Lamsonsharp is almost as versatile, and is especially good for vegetables.The Wusthof, with it's sharp tip, is better for tackling roasts and whole chicken.Both use top quality steel and keep sharp with proper care.The Lamonsharp's rosewood handle has a particularly nice feel.If this knife is going to be the workhorse of your kitchen, I would choose a quality chef's knife like the Wusthof.If you want another knife to complement your chef's knife, or never use it for meat, this Lamsonsharp santoku will make you happy.

Air pockets along the blade edge (known as kullenschliff, granton edge or hollow edge) help to keep the knife moving freely and reduce sticking. Santoku knives have a sheep's foot blade style - meaning the gently curved tip of the blade visually resembles an ungulate's (a hoofed animal) hoof. The word Santoku means "three virtues" in Japanese, which refers to the tasks of slicing, dicing and mincing. The blades are one-piece full tang, made from hardened and tempered high-carbon stainless steel from Solingen, Germany. The blades are also taper-ground, polished, hand-edged and honed.
