The titanium coating was scratched and blotchy right out of the box.The handle has a small gap and although forged it is not a heavy knife.The blade was OK but dulls quickly.

A product is only as good as the warranty...The blades are "corrosion resistant" so you would think they won't rust but read the warranty, rust is not covered.Rust occurs on stainless it states.I went to an auction site and found a german knife for only $30 more that has a lifetime warranty.This knife has a 5 year warranty because that is all I believe it will last.If you price out the whole set it is equal to the price of a much better high end knife set.

I got this knife as a kind of impulsive indulgence, I think it looked cool in its own holder and I had heard good things about Shun knives. However, all those good things are true. It is by far the sharpest knife I've owned, and I've got Henckel Zwillings (not the cheapo kind you get at Target) that have been sharpened to what I USED to think was the sharpest blade around.

I'm not dissing the Henckels - if I had not indulged in the Shun I would have been very happy with their performance. But I did get a chance to make some observations on how the Shun shone (no, it's not the same "u" as in "Sun" but it's a borderline pun):

- Ripe tomato: The Shun needed no sawing action whatsoever. It cut the initial waxy and soft skin like it was being dipped in water. All my other knives need to break the skin either with pressure, angle, or a teensy bit of sawing motion

- Dish brush: While cleaning the blade side with a circular motion in sudsy water (safe for sharp knives) I found bits of the brush bristles in the water. Anything that touched the sharp edge was cut, and that has never happened with the best knife I'd had prior to that. I can normally touch a sharp blade without cutting myself, I am not going to try that with the Shun.

- Tortilla stack: I make chips out of 8" flour tortillas by taking a thick stack and chopping it into diamonds or strips, then frying. I've always had to get over the knife and press it in because the multiple layers (20) would slow down the blade. Or I'd work in batches of 6-8. With this knife, I cut the whole 20-thick stack with less pressure than I've used for half that many.

- Potato - while hardly a test for a knife (anything cuts potato) the slicing was awesome. After cutting into the potato, it felt like the Shun DREW the potato into itself and the potato came apart like it was already sliced. If you've ever held a potato in your hand and expected to re-position your hand after you're halfway through, DON'T do it with this knife. It will be cutting into your hand before you even realize it.

If anything got close to cutting like a lightsaber, this would be it. I kid you not. I wonder how long the sharpness lasts, but I'm enjoying it while it's there.

About the Ken Onion design - those used to the generous handle on Henckels might find the handle appearing to be a bit short (I have big hands) but that's until you find the thumb and forefinger position that fits almost over the blade. However, once you hold it, you realize it gives you an added cutting advantage. My only complaint is that the advantage is wasted. You'd have to wait till the blade goes blunt before the handle's design can actually help you cut better.

I'll start by saying that I own both this knife and the Wusthof Classic 8" chef's knife, and I love them both to death. I tend to use the Shun more for cutting up poultry and such, because the steel is harder (less steeling when doing heavy work); and I use the Wusthof more for mincing and dicing veggies (much easier to use the bolster grip when doing these tasks). Quite frankly, in my humble opinion, when you are in this price range, comfort and aesthetics are going to be bigger factors than relative sharpness. Provided you clean and maintain the knives properly, you will be putting them in your will to a deserving heir.

Note to sharpness snobs: NO stainless knife can touch an old-fashioned carbon steel knife for sharpness. If you don't believe me, go and see what your butcher uses. The problem with old-fashioned carbon steel knives is that they are very high- maintenance and will look uglyafter a while no matter what you do.

Personally, if I had to choose, I'd take the Wusthof solely on the basis of my personal feel and the fact that the blade is a little easier to hone than the Shun. I am just glad I don't have to choose, but if you do, I can't recommend strongly enough getting out to a store and handling the knives before you buy. When you're in this neighborhood, about the only way you can choose badly is by not buying the knife that feels best in your own hand. You're going to get a top-quality product whichever way you go.

For many of my cooking tasks, I find I need a sort of "in between" knife.I love the Victorinox chef's knife, but often the task at hand doesn't require a knife that big.I love the paring knives, too, but often am chopping or slicing, so the paring knife is not quite enough.The 4-inch utility knife is my Goldilocks knife -- just right!

The first time I used it, I was chopping sweet bell peppers, something that's often frustrating; if the skins are just a little bit tough, many knives don't deal with them well.I end up having to rearrange the slices I've cut with the inside facing up to chop through them readily, a hassle and a time-waster.Not so with this knife!Its super-sharp blade sliced through cleanly and quickly with almost no effort.It was also a handy size for cleaning and cutting up the peppers to prepare them for chopping.From there, I moved on to the onions, then to the finely chopped garlic (I was making chili), and it performed equally well with all.The handle is a little small and light, but fits comfortably in my hand, and in combination with the thin blade, it makes the knife very maneuverable.

At first I wasn't sure I liked the white color, but now I appreciate it because it makes the knife stand out among all the black handles in my knife block, which is just what I want, since it's become the first one I reach for almost every time.For the money, you really can't beat this knife.Get it along with the Victorinox chef's knife and you just might find that instead of a drawer full of so-so knives, you can become a 2-knife cook.
