(More customer reviews)If you are searching for fully forged, qualities knives on a budget, I highly recommend the Mercer Genesis series. I am a bit of a foodie and have used ceramic blades, Wustofs and Henkels in the past. On a functional level, these knives pair right next to those. Used in culinary schools, the blades are of top quality and the knives are well balanced in the hand. Some who I have shown my knives to have objected to the synthetic "soft" handle, but I think they were mostly just mad at the price I paid when they compared these to their much more costly German ones. Are they as pretty as a set of Global knives? No. But they are sharp, durable and won't break the bank. If you are looking for a show set, you might want to look elsewhere, but if you have some cutting to do, these knives should please.

why?

- the twin select are nice sharp knives
- it is a bread knive, you don't use it so often like a chef knive!
- the handling is fine
- it's cheap

I own 2 twin selects and 4 4 stars. And must say the handling of fourstar is better and you want to have the filet knive or chefs knive from this series, or better some japanese knieve ( way sharper, but hard to maintain, I'm lazy), but for cutting bread, go with this one, the handling is not so important for cutting bread, and it does'nt squeeze my ciabatta or french bread!

For the price, Henckel's International Cutlery is a 5 star product. It never needs sharpening and provides an excellent variety of home kitchen utility cutlery. Henckel also offers additional knives in their International brand for augmenting this set.

If you are a professional, you should not be looking in this price range for your cutlery.

People are buying these knives with the Henckel name expecting the German Solingen stainless steel quality and then they post poor reviews because they got what they payed for. Keep in mind, if you really want the Solingen quality, expect to pay hundreds of dollars more. Example: The Solingen version of the 8" Chef's Knife retails for $180.00, the lowest price I found was $139.95. This knife alone will cost you more than this entire set of 16 knives with wood block.

Consider this: The Zwilling J A Henckel's Twin Profection 7 piece Solingen set, which has a 4-in. Paring Knife, 5-in. Serrated Utility Knife, 6-in. Utility Knife, 8-in. Chef's Knife, 9-in. Sharpening Steel, TwinL Kitchen/Utility Shears and a 16-slot Dark Cherry Knife Block retails for $665.00. The best price I found for Zwilling J.A. Henckels Profection 7-Piece Block Set was $399.95. The 19 pc Solingen set retails for $999.00, best price I found is $599.95. That's a far cry from a Henckels International brand 17 piece set at $80.13 and that is why I truly believe that these are top quality knives when you consider what you are paying for them. They ARE J. A Henckel quality knives, but NOT Solingen quality stainless steel. As a result, people are complaining that these knives stain and rust.

What you have to remember: J A Henckel does NOT recommended cleaning any of their International cutlery products, including these knives, in an automatic dishwasher.

Finer grades of stainless steel have a high Nickel and Chromium content. To reduce the production cost, the stainles steel used in these knives has less Nickel. It has been replaced with Magnesium resulting in a less durable grade of stainless. Detergents used in automatic dishwashers contain one or more of acidic chemicals such as nitrilotriacetic acid, ethylenediaminetetraacetic acid, methyl glycine di-acetic acid, diethylene triamine penta acetic acid, B-alaninediacetic acid, sodium iminodisuccinate. Many of these chemicals bond with nickel to produce the desired chelation reaction to reduce scaling in dishwashers. This process removes some of the Nickel, which impacts rust/stain prevention.

Take care with these products around children. These and other chemical combinations can be toxic as well as extremely caustic. Ingesting automatic dishwasher detergent can be fatal. Dishwasher detergents can cause severe skin irritation and burning. That's why it is recommended not to immerse your hands in water containing automatic dishwasher detergents.

Because chemicals in automatic dishwashing detergents negatively affect lower grades of stainless steel, J A Henckel strongly recommends hand washing this (International brand) cutlery in the milder hand dishwashing detergents. This will preserve the quality appearance of these knives and prevent staining and/or rusting (specks).

Solingen stainless steel is of a much higher quality than that used in these knife products... thus the price difference. For longer life of this product, follow Henckel's proper care recommendations for this cutlery.

(More customer reviews)These knives could be worse, but given the fancy name and reputation, they could be a lot better, too.The blades are not as stiff as you might like.Flexy blades scare me not out of fear of breakage, but rather that they are harder to control and more likely to cut something you don't want cut.Also, the Chef's knife has a pretty shallow blade, and you can't do the cool chef-chop without rapping your knuckles on the cutting board.For the money, there are better (though less prestigious) knife sets out there.

(More customer reviews)We purchased these knives...and think they've been worth every penny.They're sharp, comfortable to grip, aesthetically appealing, and come in a nice assortment.Certain knives like the Chef's knife and the table/steak knives have become the proverbial 'work horse' of the set while the tomato knife hasn't really seen the light of day since it left the box.The polypropylene handles are capable of withstanding high temperatures and, because of their nature, do not harbor bacteria like some sets that contain rivets or those with wooden handles.
While this is a great set, it is not a high-end set, so you may want to look elsewhere if that's what you're after.None of the knives have a full-tang (where the steel goes all the way through the handle) or rivets.The handles are plastic.Also, the steel is from Japan (if I'm not mistaken) instead of Germany and boy, do the Germans know how to make steel!
So, dear friends, if you're looking for a set that you can pass on to your children and your children's children then you should indeed move up the Henckels line or look into Cutco (my favorites) or another high-end set.If you're looking to buy a good, inexpensive set that looks great and is every bit as functional, then look no more!
Also, consider looking into a pair of kitchen shears... they're indespensible!
