(More customer reviews)For years I have used Victorinox paring knives (as well as their straight blade boning and fillet knives). Not just in the kitchen but also as handy, sharp flexible blades in my woodworking (and a couple in my fishing tackle box). I keep the straight blades as sharp as is humanly possible, but eventually the serrated blades dull and I cannot get them back to original sharpness. That is my only complaint.

I think enough of this set that I purchased three for Christmas gifts.

A great choice for culinary professionals as well as home cooks who enjoy high-end professional kitchen gear, this set of three paring knives from RH Forschner by Victorinox includes 3-1/2-inch fine edge parer, 3-1/2-inch wavy serrated edge parer, and 4-1/4-inch tomato/sausage knife with wavy serrated edge. Made in Switzerland, the commercial quality blades are made from stamped stainless steel with a high carbon content. All blades are conically ground on the full length of the blade as well as ground crosswise, which results in a wider break point with less risk of blade fracturing and less resistance for ease of cutting. A special tempering process is used to produce an edge that can be resharpened over and over again, so the knife can keep its original sharpness throughout the entire life of the blade.
The NSF-approved black polypropylene handles are ergonomically designed to minimize wrist tension. Hand washing is recommended, as the heat and the agitation of a dishwasher is not good for the edge of the blades and detergents can cause spots. The handles will also discolor with constant use of the dishwasher. The knives are backed by a limited lifetime warranty against manufacturers defects.
