(More customer reviews)The 7000MC Miyabi series is a return to excellence for Henckels.The combination of the hard steel core and the flexible stainless blade make this knife very chef friendly.Effortless slicing and dicing tomatoes and onions are a pleasure with these Japanese knives.
I purchased both this utility knife and the larger Gyuto.Both are razor sharp, well balanced, and maintains their edge very well.A short session on a hard felt or leather strop brings the edge back to perfection.Neither knife has needed more than a gentle touch of my ceramic hone to maintain their edge.So far they haven't needed the recommendedwhetstone sharpening yet but I've only had them a few months.

MIYABI 7000MC knives are constructed with a MicroCarbide core that features a uniform structure that has a 66 Rockwell hardness rating and is capable of holding a finer edge longer than traditional steel compounds. This three-layered clad construction provides the optimal balance of strength with corrosion and breakage resistance. The blade is finished using the traditional Japanese Honbazuke honing treatment that provides a lasting scalpel-like sharpening and 19-degree cutting edge.
The traditional D-shaped handle offers excellent finger-tip control and is made from stainless steel and micarta--a multi-layered synthetic compound of linen and synthetic resins. Wash the knife under running water with a mild soap, and thoroughly dry before storing in a dry place. To avoid corrosion and damage, it should not be cleaned in a dishwasher. MIYABI 7000MC knives should be professionally sharpened or sharpened at home with a wet stone due to extreme hardness at 60 Rockwell. It's backed by a lifetime warranty. Made in Japan.
