(More customer reviews)Faster than a food processor - I love a good chef's knife and this one is perfect.The blade is solingen steel.the edge holds up and is easily and quickly sharpened with a few strokes of the steel.The blade is wide enough that when chopping i can let the side of the blade rest against the knuckle of my left hand and very precisely and safely guide each stroke.the blad has enough weight that given a little momentum it will cut cleanly through 4 or 5 carrots or stalks of celery.the bolster does not extend down the blade to the edge so that i can sharpen the entire length of the blade.it's a workhorse tool in my kitchen.
