Tachi Ceramic 3-Knife Set Classic Series Review

Tachi Ceramic 3-Knife Set Classic Series
Average Reviews:

(More customer reviews)
I bought the Tachi three knife set (with black blades).I am not disappointed. In fact, these knives have become my preferred knives for almost everything.

Ceramic Knives are an up and coming thing, but they have advantages and disadvantages. I also bought some Stafford Worldwide Ceramic Paring Knives and I compared all of these very closely to the Kyocera Ceramic Knives, and I find them to be fairly similar, though the Tachi knives are considerably sharper than the cheaper Stafford Worldwide knives.

Advantages:

1. They retain their sharpness for many years, far longer than any steel knife.

2. They are quite inert and do not rust or react to food and chemicals.

3. The blade, at least, can withstand very high temperatures, up to 1,400 Degrees F., and it doesn't hurt the blade. Whether the handle can withstand these temperatures is another matter.

4. The blades are lighter weight than steel.

5. Because of their lack of reactivity, these knives clean up fast and easily.

Disadvantages:

1. Though the blades are sharp and retain their sharpness, I cannot say they are sharper than steel blades. Certainly razor blades are sharper, as are surgical scalpels. A good, sharp carbon steel blade would also be sharper, so don't get confused or expect too much. The advantage is not that they are super sharp, but that they are quite sharp and they RETAIN their sharpness.

2. The blades are not STRONG. They are made out of Zirconium, the same thing that is in Cubic Zirconium, and Cubic Zirconium is a very hard substance, second only to Diamonds. But they lack the crystalline structure of the Cubic Zirconium. On a molecular level they are instead, an amorphous ceramic, almost like glass, and though they don't dull easily, they will break VERY easily if put under any kind of twisting motion, side to side motion, or similar bending stress, or if they are struck against a hard object such as stone or bone. They also might break if dropped on a tile or cement floor.

I strongly recommend you ONLY use it to cut on plastic or wooden surfaces. Vegetables and boneless meat are the premier uses for these knives. Buy yourself a nice counter top butcher block knife holder to keep these knives in, and always hand wash the knives and put them back into the block. Don't leave them in the sink where they might get broken by heavy kettles or plates being placed on them.

Having said all of the above, if you want a sharp knife that will stay sharp and last for many years with proper care, then this certainly is something with which you could be happy. These actually are now the sharpest knives in my drawer, including sharper than several (older) sets of Cutco knives. I rate it four stars ONLY because of the general lack of toughness that ALL ceramic knives have, NOT because of any inherent defect in this product.

Keuken Knives Set and Cutting Board Combo Review

Keuken Knives Set and Cutting Board Combo

I love, love, love these knives! They are so sharp it makes mundane tasks a breeze.I've had my set for about 2 months now and it was one of the best purchases I've ever made in the kitchen.I had spent a lot of money on other brands of knives that had good reputations i.e. henckels and chicago cutlery but none of their products came close to the Keuken knife set.I love the sleek design of the knife holder and it virtually takes up no space on my counter, unlike the traditional knife block. These are easy to use and easy to clean and they came in a beautiful presentation box that I kept just in case I ever need to store them, which is doubtful because they get used on a daily basis!! These knives are fabulous!!

Zayka Ceramic Knife, IMPULSE Series Review

Zayka Ceramic Knife, IMPULSE Series
Average Reviews:

(More customer reviews)
I haven't really heard about ceramic cutlery before my friend told me about it. She was really excited about how sharp, easy to wash, and health-conscious they are. I became convinced and went online to do some shopping. Instantly, Kyocera came up as the leading brand in this category. Their knives seemed good and very well marketed, however, waaaay too expensive. I kept looking. That's how I discovered Zayka ceramic knives. The brand seemed new and exciting - I really liked their approach to selling. And most importantly, the prices were absolutely amazing! I bought an Impulse model because it seemed to be their best seller and was priced very appropriately. My oh my how impressed I was. This is a fantastic knife! I instantly called my friend and thanked her for opening my eyes to ceramic cutlery. The blade is sharper than virtually anything else in my kitchen and although I still love my stainless steel knives, I pick the Zayka more and more often. I recently started to cook a lot more frequently and finally realized what a good knife can do for a chef. Tiring, repetitive cutting tasks (making big salads, slicing deli meats and cheeses for sandwiches) have become an absolutely pleasurable experience! I was amazed and instantly hooked on cooking even more. I let my husband try the knife and he was so impressed that sometimes I cook but he does all the cutting. It's like a weird kitchen teamwork bonding experience. Anyway, I digress. Long story short, I love my Zayka knife and for the price of other ceramic cutlery, I don't think it can be beat

Ceramic 6" Chef's Knife - White Review

Ceramic 6' Chef's Knife - White
Average Reviews:

(More customer reviews)
I bought this knife looking for a ceramic blade to use as a chef's knife. This isn't quite it.

This is a good knife - it's inexpensive, it holds an edge well, it looks good, and since it's ceramic and plastic, it's basically zero-maintenance.Its weight and balance is good, but the handle, while comfortable, doesn't provide a lot of control over the blade for fine work.

As a general kitchen knife, this is good. But it's not quite big enough to be a great chef's knife (the blade lacks the height to guide effectively as you chop, and it might be a little too short as well), and it's a little too big for fine work.

So in short, a good solid knife, and a decent all-purpose introductory ceramic knife.

Friedr. Dick Premier WACS 8-1/2-Inch Bread Knife Review

Friedr. Dick Premier WACS 8-1/2 inch Bread Knife
Average Reviews:

(More customer reviews)
If I was just reviewing this knife for myself, I'd only give it three stars. I'll explain why, but I think most people would like it just fine, if you ever managed to get past the sticker shock, that is.

Pros:
Excellent materials, including German steel that "rings" like it's auditioning for a Johnny Depp swashbuckler. Proper forged bolster, nicely-riveted handle, great blade curvature, lovely weight and balance.

The teflon is a nice touch, especially for soft, damp breads and non-bread items - this is an excellent tomato knife, for example. The blade also has a really nice extra-sharpened tip.

Cons (my three particular nit-picks first):
I make big, crusty loaves that the knife is sometimes a little too short for.

The scallops are only on one side of the blade, meaning that it doesn't naturally cut straight and is right-handed only, which the description doesn't mention. For the dexterous majority, that's no problem, but for us sinister types, it's a fairly big deal.

I find it too shallow, sometimes scraping my knuckles on the work counter when using thin cutting boards.

I'm not sure how durable the Teflon is: when I did the Johnny Depp "ring" test, I managed to put a ding in it, though I wasn't being remotely rough (or remotely swashbuckling, for that matter).

And finally, back to the sticker shock. I happily shelled out a similar amount for my big Henckels chef's knife, but it's rarely out of my hand when I'm in my kitchen. After writing this, I checked Cooks Illustrated (the definitive source for comparative equipment reviews). They didn't particularly like the (significantly cheaper) F. Dick model they tested, for many of the same reasons I mention above (making me feel simultaneously smug and unnecessary), saving most of their praise for a 10" Victorinox that sells for chump change.

This one would probably work best as a rather spectacular gift, especially if you accidentally left the receipt in the box.

Product Description:
Fully forged, perfectly balanced, and ergonomically shaped, this 8-1/2-inch bread knife from Friedr. Dick's Premier WACS line is specially developed for edge retention and easy sharpening--perfect for both professional and home-based chefs. Adhering to the high specifications of the World Association of Chefs' Societies (or WACS), the Premier WACS line features a hygienic, antibacterial non-stick coating that effectively prohibits food to stick to it. And thanks to the ceramic particles in the coating, it's highly wear resistant and reduces cutting effort. The knife is complemented by a plastic handle with a stylish mother-of-pearl finish.
Produced from a single piece of red-hot steel under high pressure without any welding, the forged blade, bolster and full tang are optimized for weight distribution. Starting with high-carbon stainless steel, the Premier WACS line undergoes a special hardening technique with the addition of the X 45 Cr Mo V15 alloy--with chromium strengthening the steel against wear and tear, molybdenum giving it resistance to corrosion, and carbon providing absolute hardness. The blade is then ice-hardened for long edge retention, and laser angle-measuring equipment is used to check whether the optimum grinding and honing angle has been achieved.
The handle is made from high-quality, durable, food-safe plastic, and it's designed with a comfortably ergonomic finger guard at the end. A special manufacturing technique results in the blade and the handle being tightly linked so that not even the finest crack or gap is left. Unlike traditional knives with a handle housing, it is impossible for food residue or liquids to penetrate.
Manufactured in Germany, every Friedr. Dick finished knife is sharpened and honed by hand--just as it's been done since the company's founding in 1778 by Johann Friedrich Dick--and each knife is given the unmistakable Friedr. Dick etching. While this Friedr. Dick knife is dishwasher safe, it's recommended that you hand wash it using a mild dishwashing soap; rinse with water and dry thoroughly with a towel. Backed by a lifetime warranty.
