Trizor Professional 8" Chef's Knife Review

Trizor Professional 8' Chef's Knife
Average Reviews:

(More customer reviews)
We ordered these knives (8- and 10-inch) for our restaurant kitchen back in 2006 and it was a decision we quickly came to regret: they didn't hold up well at all under the stress of daily use and we were out a lot of money. The handles discolored after the first month and being unbalanced (blade-heavy), they made your fingers ache after a while. On top of that, we spent more time sharpening and resharpening them than actually cutting. In the end our frustration led to throwing them out. We didn't feel right donating them to a charity kitchen given their inherent flaws.

Chef's Choice is a low-end sharpener company that delved into the knife business a few years back and garnered a handful TV-celebrity chef endorsements. This is a knife for the Rachel Ray/Emeril/Paula Deen crowd at best. Since then, that crowd has moved on to even cheaper knives. Blade hardness is only one of many factors that comprise a good knife. That 60Rc rating that hacks like Chad Ward ("An Edge in the Kitchen") promote actually works against you in the kitchen because you're ALWAYS sharpening this knife because it's so brittle! But Chad likes it so much his book is virtually a Chef's Choice marketing pamphlet. Chad's book only recommends you use three knives in the kitchen, and of those three, he finds no value in Santoku knives. That alone should tell you he's a reporter, not a chef, and his book is composed of outdated and misguided information about the knife industry.

Take it from someone who's worked in professional kitchens and restaurants for a lifetime, skip this knife and skip this brand. Your hard-earned money is better spent elsewhere. Also, I could care less where my knives are made. There's a reason why the best knives have been made in Germany and Japan for centuries -- because they're the best at it and have been in the business with chefs since the beginning.

Excellent set of knives given to my daughter, for her birthday. The set covers all her needs and are everything she hoped when she sent me the link to them. She works with Chefs that advised her Mac knives were a great investment if she is going to be serious about pursuing the culinary arts. She likes the light weight and ease of cutting with this set.She will use a knife bag for transporting them, and the rounded tips make that practical.

Global 7-Inch Deba Knife Review

Global 7 inch Deba Knife
Average Reviews:

(More customer reviews)
Professional cook here. I don't use this knife as an all purpose knife. It wasn't intended to be one. I've tried to, but it doesn't work very well as one. It being single bevel, it tends to make the wrist turn while cutting hard objects like carrots, which is why it shouldn't be used in place of a chef's knife. Debas are meant to be used for breaking down whole chickens (not cutting the bones though) and butchering fish (can cut fish bones).

While the Global deba (and all Global knives in general) is very sharp out of the box, it is because of the concave edge they put on it, not the traditional V edge. It stays sharp longer, but without special equipment, one cannot sharpen Globals to the same factory edge with just sharpening stones.

I don't see how Global can really classify this knife as a deba though. It's too thin to be a real deba and rather light. Debas are usually twice as thick and have a tougher edge, rather than the delicate edge on the Global deba. I had to sharpen this knife to a more obtuse angle to use it for its intended purpose because the edge kept on rolling or chipping. Plus, it's rather expensive. There are much better debas out there made with better steels for the same price or cheaper. I applaud Global for being unique in their designs, but function over form is extremely important with knives in the professional kitchen. A deba is meant to be used and abused with no babysitting.

Product Description:
This 7-in. Asian Deba Knife is sharpened on the right side of the blade only, making it suitable only for right handed cooks. The mirror finish near the blades edge encourages ingredients to fall away from the knife and allows the cook to keep ingredients pristine. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip.Because the knives are very light weight they reduce hand fatigue.Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps.Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18 percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

Global 5-Piece Knife Set with Storage Dock Review

Global 5-Piece Knife Set with Storage Dock
Average Reviews:

(More customer reviews)
These have got to be the sweetest knives I have ever used. I used to use a Henckle chef knife, but it doesn't hold a candle to the Global.
I only have two beefs with these knives:
1) They are so sharp that they can leave deep gouges in your cutting board if you are careless (especially the serrated while cutting bread).
2) The knive handle is more difficult to dry because its dimples like to retain water. When it is wet it can create an unusual tactile sensation in your hand.
These are minor things though. The bottom line is that the knives make cutting and chopping a pleasure.
And they look cool too!

MAC Cooks 10 inch Dimpled Knife #TH100 Review

MAC Cooks 10 inch Dimpled Knife #TH100
Average Reviews:

(More customer reviews)
I have been using an 8" forged German knife for a long time in a New Orleans restaurant and found myself using my co-workers 10" more often than my own so I decided to try something new. I wasn't aware when I bought this knife that it is stamped not forged so when I first received it I was a little disappointed in how it felt. It's very light and the blade flexes a lot more than I am used to giving it a cheap feel. After two weeks worth of hard work though I have become accustomed to it and wouldn't go back. The blade has remained sharp and kept it's true edge with only minor steeling. I finish with my prep and am ready for more due to the light weight and great balance. This is a surprisingly high quality knife that I would recommend to anyone.
