We ordered these knives (8- and 10-inch) for our restaurant kitchen back in 2006 and it was a decision we quickly came to regret: they didn't hold up well at all under the stress of daily use and we were out a lot of money. The handles discolored after the first month and being unbalanced (blade-heavy), they made your fingers ache after a while. On top of that, we spent more time sharpening and resharpening them than actually cutting. In the end our frustration led to throwing them out. We didn't feel right donating them to a charity kitchen given their inherent flaws.

Chef's Choice is a low-end sharpener company that delved into the knife business a few years back and garnered a handful TV-celebrity chef endorsements. This is a knife for the Rachel Ray/Emeril/Paula Deen crowd at best. Since then, that crowd has moved on to even cheaper knives. Blade hardness is only one of many factors that comprise a good knife. That 60Rc rating that hacks like Chad Ward ("An Edge in the Kitchen") promote actually works against you in the kitchen because you're ALWAYS sharpening this knife because it's so brittle! But Chad likes it so much his book is virtually a Chef's Choice marketing pamphlet. Chad's book only recommends you use three knives in the kitchen, and of those three, he finds no value in Santoku knives. That alone should tell you he's a reporter, not a chef, and his book is composed of outdated and misguided information about the knife industry.

Take it from someone who's worked in professional kitchens and restaurants for a lifetime, skip this knife and skip this brand. Your hard-earned money is better spent elsewhere. Also, I could care less where my knives are made. There's a reason why the best knives have been made in Germany and Japan for centuries -- because they're the best at it and have been in the business with chefs since the beginning.

The art of knife sharpening, then KEEPING them sharp is and interesting issue. On one hand, it's amazingly simple, while at the same time being both complex and difficult.

However, once those secrets are mastered, the physical aspect is, indeed, simple. And the KEY to keeping your blades conditioned and in good shape after they're initially sharpened is a good steel (or ceramic steel). I have seen kitchen knives that, once sharpened, have never needed anything further than the occasional steel and they've remained razor sharp through their entire effective life span (which is greatly increased by using the steel).

When a blade is sharpened, the stones actually cuts the metal and reshapes the angle of the edge. So full sharpening removes metal at a relatively significant rate.

The steel, once the blade has been used and dulled, "pushes" the metal of the edge back into the proper place and alignment. This process simply moves the metal back to where it should be and does not remove metal in the process. Unless the blade has chips or nicks or notches in it from use, a full re-sharpening is RARELY warranted.

The Chicago Steel is of medium size, balances near perfectly and and is extremely effective in restoring the edge. Moreover, it's so simple to use, my wife freely avails herself of the steel and will do finishing touches to her knives when she has a particular job to do and I'm not around.

All in all, after climbing through the learning curve, I find this to be an Excellent tool that does its job perfectly and at a reasonable prices.

I would highly recommend this steel to anyone who wished to learn proper care and handling of their blades.

The most prestigious knife brands in Japan are Masahiro, Masamoto, and Misono.Together they form an elite group known as the three M's.Masahiro MV-H knives are produced by Masahiro Co., Ltd. in Seki, Japan.Among the numerous ranges of knives produced by Masahiro, the MV-H range is the top of the line.It is indisputably the best range from one of the best factories in Japan. The cutting edge is asymmetrical:80% on the right side of the blade and 20% on the left side, then polished to a mirror finish.This tapered style edge takes pressure off food for a perfect finished cut. This asymmetrical edge is derived from traditional one-sided Japanese knives which are also 80/20 asymmetrical.The 80 percent side on the MV-H is only ¼" high as compared to the ¾" on a traditional Japanese knife, but the idea is the same.An asymmetrical edge is approximately 35% thinner than a 50/50 straight edge. The Masahiro knives are amazingly light weight, yet perfectly balanced.The handle is a composition plastic handle which is remarkably durable and is much more practical and longer lasting than a laminated wood handle.The composite handle is resistant to bacteria, which keeps the knife very hygienic in daily use.
