(More customer reviews)For the past 15 years I have been using a set of Wusthof knives that my husband purchased, with the exception of the paring knife, which he bent prying something open (sigh) and then tried, fairly unsuccessfully, to bend it back into position.Consequently, I have been using a five-inch paring knife but have never felt comfortable with the length.I treated myself to this knife, which for me is a fairly nosebleed price of $20 (including super saver shipping).I used it today as soon as I unwrapped it and have completely forgiven the cost.This knife weighs about double the Wusthof counterpart, has great balance, and is sure in my hand.I should have purchased this knife a long time ago and appreciate the point guard and sheath so that I can leave it out full time on the counter.November 16, 2007 update:This knife really paid for itself when I used it to prepare chestnuts for my turkey stuffing.Those shells are tough and have to be cross slashed on both sides prior to roasting.I have dreaded this part because my Wusthof blade was fairly lightweight, and I was constantly afraid of accidentally cutting myself.The Anolon knife does the job in about one-third of the time and cuts right through the outer chestnut shell.Now I am really impressed.

(More customer reviews)One of my hobbies is kitchen knives; a corollary is knife sharpeners.I've bought a dozen or two, and tried many more.This is the best of those I've tried.It addresses all the issues.There are three stones with three angles, giving the compound edge that experts prefer (this proves it superior to the carbide sharpeners, with a single angle).The stones are wet (water bath), producing a finer set of cuts, and a more durable edge.It's not motor operated, substantially reducing cost.Global produced a similar sharpener, but with only two edge angles, and has raised the price.My knives include Global, Forstner (Victorinox), Wusthof, Gerber, Fiskars, and Brieto (my favorite, an extraordinary Japanese knife).All have superior metallurgy.With each of them, this sharpener has produced the sharpest and most durable edge.One of those technologically superior products that doesn't come along very often.

Anolon Advanced 5-Inch Santoku with Hollow-Ground Blade Review

(More customer reviews)I've got the paring knife from this series, and I love it. Perfectly balanced, perfectly sharp. I had high hopes for this santoku, which is really kind of a compromise blade between a chef's knife, a cleaver, and a traditional santoku, and which I got for almost half off.

The grip is nice, and the blade is full tang (with a very nice synthetic grip coating the otherwise metal handle), making it very sturdy. But unfortunately it's just not sharp enough. Unlike my large santoku, which slices through peels and crusts, this guy needs much more force applied. I still do plan to use it for crude jobs (boning raw meat, rough dice of onions, bread), but it has perhaps been compromised too much by trying to do too many cutlery jobs. It's only average at most of them.

It's well-made, though, and will last a lifetime. And it comes with a nice plastic sheath so it can survive life in a drawer as a "sometimes" or backup knife.

(More customer reviews)The anolon 3.5inch santoku is the smallest I've seen. Full forged with bolster, a rare find in such a small santoku. German steel is ice-hardened and glass finished. Glass finish resists rust and stains better than others. The bird's beak pearer is a bonus! Both have a special protective holster. I'd been looking for it since I'd seen it in a store, but finally found it at Amazon!

(More customer reviews)I ordered this as a replacement for one of my other Anolon Santoku's that I gave away as a gift and now I know the difference between the two.This does not have the same weight as the other santoku nor does it come with a plastic slip on.the blade was still very sharp and feels good in the hand.

Great suprise when I opened the box.This knife is built like a tank!Heavy weight, well balanced, and comes with one of the niftiest protective covers that the blade slides into and then locks.But I bought this to cut bread.And it is smooth, sharp, and perfect for the task.Wish I had found out about this beauty before I bought some of my other cooking knives!

(More customer reviews)After holding off on buying new knives for years, and settling with a drawer full of hodge-podge of collected crud, I finally decided to treat myself.Could not be any happier with them.Felt guilty at first for buying myself something a couple of months before Christmas, but I rationalized that with all the cooking I'll be doing, I'll be far better off.The are amazing.The rubber-like grip makes for steady handling.They are weighted perfectly.Comes with a great sharpener, as well as super simple instructions on how to care for them.(Who knew you are really supposed to sharpen them after each use!Takes two seconds, and will keep them like new forever!)Anyway, I'm still rambling.But I'm just so happy with them.And I love the santoku knife!The block looks great, too.
