(More customer reviews)This is an excellent knife given the right conditions.If you find yourself cooking large roasts of any sort, this is the knife to carve with.
This thing goes through prime rib like no other knife I've ever used.You want paper thin beef?Done.Big honking thick slices of beef?Done.
The one drawback of this knife is when you are slicing near bones.It's a pretty stiff knife and very long with a blunt tip.If you want to get the tender little bits from the bone, get another knife out, or plan on getting your hands dirty!

Part of the Four Star series, this Granton knife measures 10-in. and features a series of alternating oval wells in the blade that prevent meat from sticking and ensures even slices, from thick to thin. The knife is made of high-carbon stainless steel and precision-honed, with a laser-controlled edge, a balanced super-bolster, and a tang that extends to the back of the polypropylene handle, which is permanently bonded for seamless accuracy. J.A. Henckels has been manufacturing fine cutlery since 1731. Made in Solingen, Germany, its knives are forged, not stamped. Blade density is improved using the FRIODUR ice-hardening process, which provides a sharper initial edge for easier maintenance over time. Before I buy a knife, I have to hold it and fiddle with it to make sure it's properly balanced.I have to see that the bolster (the flared bit between the blade and the handle) is big enough to act as a brake, but not so large as to be a nuisance.I have to check the pamphlet to see that it's made from a good quality stainless steel.
This Henckles Pro-S Steak Knife passes all those tests, plus two others you can only check over time:Does the handle stand up to repeated use, and does the blade really hold it's edge?

These knives last and last, and slice and slice -- and are a pure pleasure to use.And they look great on your table, too.Relaxed enough that they don't make your everyday china look cheap, but well-made enough to look good next to your wedding china.

(More customer reviews)My boys bought this set for me from Kohls.It's already showing rust stains, and just doesn't cut that well.It's frustrating, because the set "looks" beautiful, but it just doesn't deliver.Unfortunately I threw away the box and receipt, so probably don't have any hope of returning them.As a last ditch effort, I probably will see if they work any better if I can get them sharpened, but since they are all serrated, I doubt it.I wouldn't buy one if I were you!

(More customer reviews)Had the knives two weeks, and was really impressed by the look feel and cut.However, after a couple of washes, rust spots began appearing.I suppose if I washed them all by hand and dried them off right away instead of air drying this wouldn't have happened(my fault..(?) ). I expected better, since I've had cheap K-mart knives for 10 years that didn't rust.I contacted farberware and they did say that if I return the rusted knives they would exchange them, with a turn around time of 6-8 weeks.
