(More customer reviews)All those dull old scissors I collected over the years, as they gradually lost their edge, are now SHARP.I stumbled across this product while looking for a knife sharpener.Since I was about to buy yet another pair of scissors, I decided to try it.It really put a good edge on all my shears (except pinking, nail and hair - which it does not sharpen).You have to be somewhat careful holding the blade at the correct angle, as there is a bit of wiggle room under the guide.One practice run with a cheap pair of scissors should suffice, however, and it is wonderful to have really sharp scissors again.Lots of them!

(More customer reviews)Practice, practice, practice and still I am not good at sharpening knives with the sharpening steel that came with my first Wusthof knife set. I have almost mastered the technique but I still cannot get the knives as sharp as I want. Enter the Wusthof Ceramic Knife Sharpener, with its idiot proof method for keeping knives very sharp. Five or six quick strokes in this device and a very sharp edge is returned to my knives.

Note that I said "keeping" knives sharp. The knives must be relatively sharp to begin with. This sharpener does not sharpen dull knives...it only maintains the sharpness of sharp knives. For very dull or dull knives you need to use an electric sharpener like the one of the Chef's Choice models.

However, if you are like me and have not mastered the traditional sharpening steel this is the easiest way to maintain sharp knives of all manufacturers.

Wusthof 10-Inch Sharpening Steel Review

(More customer reviews)A lot of people assume that all sharpening steels are the same.That is not true.

I've owned this sharpening steel for about 6 years.It replaced a steel I had been using for about 20 years.I usually hone my knives between every use.With my previous steel, it typically took 4-10 swipes to restore a razor edge, with occasional resharpening using an alumina (corundum) stone; with this steel, I can get the same razor edge in 1-2 swipes, and never need to use the stone.

This is consistent with some hardness measurements I've seen on the web, which indicated that Wusthof sharpening steels were significantly harder than those from other major manufacturers, including their closest competitor, Henckels.

There is one downside to this steel:the steel itself only extends about half an inch into the plastic handle.If you just plop it into its slot in the knife block after each use, the steel will eventually fall out of the handle.It's not terribly difficult to force the steel back into the handle, though, and I can put up with having to do that every few years in exchange for the pleasure of using this steel on my knives.
