THE GOOD: For only a little extra money, this knife sharpener adds a "pre-sharpen" stage that quickly puts a straight, coarse edge on large or small knives. Works very well, and minimizes wear on diamond pads used for later fine edge-sharpening. IMHO, the knife after just pre-sharpening is actually perfect for cutting fruits, vegetables, other foods that cut better with slightly serrated blades. Using all three sharpening stages with this rig produces a top-quality knife edge which lasts as long as the metal will allow and cuts beautifully through meats or other food.

THE BAD: Noisy, and vibrates a bit during normal use. The four little rubber feet do stabilize the machine (on clean dry surfaces) but might not last "forever" in kitchens where a portable electric sharpener gets thrashed excessively. Removable plastic cover for first-stage pre-sharpen slot is a bit flimsy and can easily get lost (a hinged or SLIDING cover would be better). Reminder: the diamond pads in modern sharpeners can and do wear out (buy a few extra spares); replace them when your dull knives "laugh in the face of danger."

Only complaint = even with helpful magnetic grippers, the second- and third-stage sharpen and hone slots require a firm knife grip (especially with small knives), careful aim, and control of angle and knife motion. In other words, this sharpener is not "automatic"; it's fast and precise, but only if the user is slow and methodical. Practice with your cheap old knives before working on the high-class cutlery.

All those dull old scissors I collected over the years, as they gradually lost their edge, are now SHARP.I stumbled across this product while looking for a knife sharpener.Since I was about to buy yet another pair of scissors, I decided to try it.It really put a good edge on all my shears (except pinking, nail and hair - which it does not sharpen).You have to be somewhat careful holding the blade at the correct angle, as there is a bit of wiggle room under the guide.One practice run with a cheap pair of scissors should suffice, however, and it is wonderful to have really sharp scissors again.Lots of them!

There are definitely cheaper knife sharpeners in the world, but why risk using them when you're dealing with good knives.This does exactly what it should do, which is to sharpen knives (including serrated, which is a huge deal).This sharpener ensures that the blade is sharpened at the correct angle, which is something that a lot of sharpeners don't account for.I would definitely recommend this knife sharpener.

This little machine delivered what it has promised, sharpen the knife sharp.. with the price around $100.00 the performance of this machine surpasses other machine cost more than $300.00 from other brands. This worth the money.. you get quality machine, from strong motor, the best stone and the designer who know ins and outs of the sharpening that made this machine works ..really works sharpen your knife..this is not for serrated knife.. I think KE-280 will do the job..but cost more. So far this is the best one in the market..

The 2100 is the top-end commercial version of the Chef's Choice electric sharpeners. According to the manufacturer (EdgeCraft) it is intended for "busy commercial kitchens." It is a bit larger (about an inch in each dimension) and heavier than the consumer models but still compactenough to leave on the counter top. The sharpening module is removable. It can be run through a dishwasher; therefore, if you sharpen a dirty knife, you can clean the sharpener. You can also purchase replacement sharpening modules.

I purchased this for home use, so I will compare it to the consumer models and comment on the price.

The 2100 uses a 3-stage sharpening system. The first two stages use diamond abrasives and the third stage uses flexible stropping disks. You can achieve several edge configurations by using or skipping certain stages. There is good information available on the Chef's Choice Web site ([...]) that I won't repeat here.

The sharpening unit itself appears to be about the same size as the consumer versions. The sharpening stages are like those on the M120 consumer model. Both have 2 sharpening stages and a stropping stage. (By comparison, the M130 has one sharpening stage, a stropping stage, and a steeling stage.)

The 2100, like the other Chef's Choice sharpeners does a very good job of sharpening knives. In terms of results, you just can't beat manual sharpening -- that is, if you have the right equipment, you know how to use it, and you do use it. I have a good manual sharpening system, but it is a bit time consuming to set up, so I tend to do it only when I have several knives that need sharpening. The result is that at any given time, I may pick up a knife that is not quite as sharp as I would like. With an electric sharpener on the counter top, I can give a knife a quick touch up whenever it needs it. The result is that all my knives stay very sharp all the time.

The real question, I think, is whether the extra cost is justified for home use. Roughly speaking, the 2100 is four times the price of the M120 or M130. In fact, the cost of a replacement sharpening module for the 2100 is only slightly less than the cost of a new M120. I expect that the abrasives in the consumer units should last about as well as the sharpening module in the 2100, which is rated at 5000 sharpening cycles. If you sharpen 20 knives a week, that's about 5 years. I'd guess most people are more likely to sharpen 5-10 knives (or less) per week. That translates to 10-20 years. From an economic standpoint, it makes better sense to buy an M120 or M130 and send it back to EdgeCraft for refurbishment when the abrasives wear out or just buy a new one.

Of course, there are those pesky non-economic factors. I am often willing to spend more money for something that will take more use and abuse and which is likely to last at least as long as I will. I am very happy with the 2100 as long as I don't think about how much I paid for it.

After my wife complained that our kitchen knives were getting too dull to use, I set out to find a good knife sharpener for household use. I researched a bit and found several options - both manual and electric. One name that kept popping up was "Chef's Choice" and I noticed very few negative comments on their models. Having both a discount coupon and gift certificate from Bed, Bath & Beyond - I decide to make my decision there. Unfortunately, there wasn't any sales staff knowledgeable about knife sharpeners and I had to go it alone. It was there that I first noticed the Waring KS80 Professional Sharpener. With it's black and stainless finish - it was definitely more attractive than the plain white Chef's Choice - but, it was somewhat more expensive retailing at $100. I settled for the Chef's Choice 110, took it home and was promptly disappointed. On the expensive chef's knife I first tried it on, it left a decidedly sharp but ragged edge on the blade. It looked as though I had tried to sharpen the knife on the sidewalk! I didn't dare try sharpening any other knives and risk leaving such an ugly edge on them. Bed, Bath & Beyond gladly made an exchange for the Waring and I was much more pleased with it's final results - a sharp blade with a more visually-pleasing edge. It even cleaned up the rough edge left by the Chef's Choice. The only disadvantage I have found is that, with most knives, the inch or so of blade nearest the handle cannot be sharpened since the hilt of the knife keeps it from being placed into the sharpener's slots. This, however, is not a major drawback since this area of the blade is not frequently encountered in most uses. The Chef's Choice will cover the entire blade length - but with a very rough finish. I recommend the Waring over the Chef's Choice without reservation - but the Waring is probably a bit too expensive for an appliance that will likely see only a very few uses a year.
