The 2100 is the top-end commercial version of the Chef's Choice electric sharpeners. According to the manufacturer (EdgeCraft) it is intended for "busy commercial kitchens." It is a bit larger (about an inch in each dimension) and heavier than the consumer models but still compactenough to leave on the counter top. The sharpening module is removable. It can be run through a dishwasher; therefore, if you sharpen a dirty knife, you can clean the sharpener. You can also purchase replacement sharpening modules.

I purchased this for home use, so I will compare it to the consumer models and comment on the price.

The 2100 uses a 3-stage sharpening system. The first two stages use diamond abrasives and the third stage uses flexible stropping disks. You can achieve several edge configurations by using or skipping certain stages. There is good information available on the Chef's Choice Web site ([...]) that I won't repeat here.

The sharpening unit itself appears to be about the same size as the consumer versions. The sharpening stages are like those on the M120 consumer model. Both have 2 sharpening stages and a stropping stage. (By comparison, the M130 has one sharpening stage, a stropping stage, and a steeling stage.)

The 2100, like the other Chef's Choice sharpeners does a very good job of sharpening knives. In terms of results, you just can't beat manual sharpening -- that is, if you have the right equipment, you know how to use it, and you do use it. I have a good manual sharpening system, but it is a bit time consuming to set up, so I tend to do it only when I have several knives that need sharpening. The result is that at any given time, I may pick up a knife that is not quite as sharp as I would like. With an electric sharpener on the counter top, I can give a knife a quick touch up whenever it needs it. The result is that all my knives stay very sharp all the time.

The real question, I think, is whether the extra cost is justified for home use. Roughly speaking, the 2100 is four times the price of the M120 or M130. In fact, the cost of a replacement sharpening module for the 2100 is only slightly less than the cost of a new M120. I expect that the abrasives in the consumer units should last about as well as the sharpening module in the 2100, which is rated at 5000 sharpening cycles. If you sharpen 20 knives a week, that's about 5 years. I'd guess most people are more likely to sharpen 5-10 knives (or less) per week. That translates to 10-20 years. From an economic standpoint, it makes better sense to buy an M120 or M130 and send it back to EdgeCraft for refurbishment when the abrasives wear out or just buy a new one.

Of course, there are those pesky non-economic factors. I am often willing to spend more money for something that will take more use and abuse and which is likely to last at least as long as I will. I am very happy with the 2100 as long as I don't think about how much I paid for it.

Cooks Illustrated gave this sharpener a very strong review (their best-of-class as I recall) and I reluctantly laid down my trusty sharpeningsteel to give it a try.Once I got this special 3-beveled edge on ourknives I never regretted the decision to switch.What's particularly niceis that the edge returns so easily with a quick touch-up on the finestsetting.
I've also notice virtually no obvious loss of metal on theknives after many touch-ups, a problem with other sharpeners that canquickly consume your blades.If you want an edge that makes you feel morelike a surgeon than a chef, this will deliver.
[The only downside is thatit's no good for serrated knives, but their newer model 120 will handlethem too.]

This is a very good electric knife sharpener. The operation is incredibly easy. One literally just needs to pass the knife a few times through the machine, and the edge is nicely sharpened. The result is not surgical-knife sharp, but for regular kitchen chores, it is perfect. It even accept the hugely thick chopping knife. The only minor problem I ever had was with a cheap serrated blade, which was just too soft to hold a nice edge, but I don't consider it a fault of this machine.

I've been using the Chef's Choice for years now. I still use the one I bought in 1992 almost daily. My knives are still in wonderful shape and hold their edges beautifully.
The guesswork has been taken out of knife sharpening with this machine. I'm only so-so with a steel and in any case, a steel can't do the three stage sharpening that the Chef's Choice does. Since it holds the knife at the perfect angle for each step, it makes it easy for the fumble-fingered (like me) to create a perfect edge every time!
I'm buying one for my daughter now, mine is in perfect condition after more than 10 years and I imagine it will be for years to come yet!
I paid over 100 dollars for this very sharpener back then, which was a LOT of money at the time. They've come down so far in price that you haven't any excuse not to get one now!

I am an Executive Chef and have worked in a kitchen for over 25 years. I purchased this sharpener about a month ago and so far I am very satisfied. If you read the manual, it is very easy to use. I was at first worried about taking too much metal off of my kinves. As long as you don't over use the first stage that should not be a problem.
It put a good edge on my knives quickly and easily. I have a 10 inch wusthof that is my main kitchen knife. I put an edge on it with stage 1 over a month ago and it has remanined very sharp since. All you have to do is run it through stage 2 ( which is just like a steel) every once and a while and it maintains it's sharpness.
So far I am very satisfied.

Mini review of Chef's Choice Trizor 15 XV knife sharpener.

It was an early Christmas present from my wife, purchased by her on Amazon, because I had been complaining that we ought to get presents for Thanksgiving. smile.gif

Through the years, whether cooking in my restaurant or just cooking at home, I have tried so many different sharpening systems. I never cared for earlier models of the Chef's Choice but also never did find another system that was easy and reliable for me to use.

This sharpener creates a 15° edge angle per side on all knives, whether they be Asian or
European/American made. It creates two upper bezels about the cutting edge. I think that they are at 17.5° and the top one at 20°. These add strength to the narrow angled cutting edge so it should stay sharp for a longer period of use.

Most of my knives have an edge of 15° or less already with a few at 20°-25° per side.

There are three sharpening stages with Stage 1 being the one to reshape your knives. The other two stages refine the edge.

It is important to read and follow the instruction manual and to develop a burr on the knife before moving on to the next stage. The manual will explain and illustrate the burr as I will not go into it here. But it's easy to detect.

If your knives are European or American made, you will spend the longest time in Stage 1 until you feel the burr. The manual indicates that it may take as many as 20 sets or more of pulls to develop the burr. This was the case with my Sabatier's and a few others.

If you have mostly Asian knives that were at 15° to start with, it should only take up to 5 pairs of pulls to develop the burr.

Once is Stage 2, the burr develops much quicker and I found that I never needed more than 5 pairs of pulls.

The only knives that failed to develop the burr after 30-40 pairs of pulls through stage 1 were several that were custom made by an American knife maker. Now these knives are absolutely beautiful to look at, perfectly balanced, a pleasure to hold and can get fairly sharp. They did get much sharper with the CC 15 even though I could not get the burr.

The problem with these knives, and it was a problem before I ever got this sharpener, is that the metal is so thick, that, from day 1 of use many years ago, they could not slice completely through, say, an apple, without splitting it like a maul. The cut starts out easily but then it cracks through the fruit or vegetable like a wedge. So I never really used them because all of my other knives are so much thinner that they can easily slice completely though anything.

But suffice it to say, after using the Model 15XV, all of the 30+ knives that I use regularly are razor sharp, and are sharper than they were when first purchased.

But if most of your knives are a more standard 20° edge per side, you may want to get the Chef's Choice model 120. It is identical except for the sharpening angles, which are 20° for the cutting edge, 22.5° for the second bezel and 25° for the upper bezel. It would be less time to sharpen them and less work for you to do.

But I believe that the 15° edge is sharper but it practical terms, how sharp do you need your knife to be?

And the XV restored my hand made $150 Japanese knife that was dulled with several nicks taken from the cutting edge by the Smith electric sharpener that I returned for a refund. The Smith engineers claim that it was user error that caused several of the diamonds on the wheel to break off, which is why my knife was damaged. They claimed that I must have held the knife at an angle while pulling through the wheels instead of holding it straight. I absolutely deny that I did this, especially as it was the 21st knife I pulled through their sharpener, 8 times each. Every pull I made was straight across.

The nicks are gone and the knife is scary razor sharp again as it had once been.

And for comparison purposes, I was pleased with the Smith's sharpening of my knives before the "incident" but the Chef's Choice has made them MUCH sharper. The Smith, by the way, created a 22.5° per side edge.

I also have the Spyderco system which requires much more skill to get similar results and takes much, much longer to use, and also used the Edgemaker Pro system which crates an 11.25° angle per side. It worked best with my serrated knives but none of the knives got as sharp with their system.

So how did I test the sharpness? Of course, I cut soft tomatoes with ease which is the standard test. And they all sliced effortlessly through a sheet of paper.

But I folded a 12 page tabloid newspaper in half and was able to easily slice through it with each one of the knives that I sharpened with the Chef's Choice 15XV.

I give this sharpener my ultimate endorsement. I assume that the Model 120 will give the same results as it is exactly the same other than the sharpening angle, as I have mentioned.

I only wish that I had more knives to sharpen with it. smile.gif

I was very suspicious of this guy, but having actually used it I can only recommend it.

We've had one in my house for quite some time. My mother bought it because she is not interested in learning the ins and outs of knife maintenance and read several great reviews of the 120.

I was suspicious, mainly from bad experience with cheezy knife sharpening gadgets, but also because my mom's knives, which had been through the Chef's Choice, always had crappy edges. I had made something of a habit of looking sideways at the Chef's Choice 120 on our kitchen counter.

I finally read one too many good reviews of this product (when I wasn't even looking for them, they just seem to pop up here and there if you read enough about cooking and cutlery), I decided to give it a shot on a Henckel's 5-star Santoku that had lost it's edge. I love the size and shape of a santoku, but it had gotten dull and was superceded by a Kasumi chef's knife I received as a gift. I figured the worst thing that could happen was that a knife I wasn't using would remain unusable.

First off, I Read The Freakin Manual. Do not underestimate the importance of this step. If I had just bought it based on good reviews and ripped open the box, I might have done this, but since I was already suspicious of it, I read through every word of their instructions. If you don't read the manual, the way you assume it works may be wrong (the big mistake might actually be overusing it). More on that later.

Next, before I turned it on, I did a few practice pulls with the power off. Get a feel for pulling the knife through smoothly and evenly. Make sure you keep the knife blade properly aligned with the wheel (i.e. if the knife you're sharpening has a curve, pull in a curve to keep proper contact with the sharpening wheels). Look at a clock, and make sure you're pulling at roughly the speed recommended for your knife's length.

Once I thought I knew how to use it, I made one pull through each side of stage 1. Felt the blade, as per the manual, and I had the burr they said I should feel for. Cool, it seemed to be working. I would recommend doing the burr check, because it does tell you that things are going according to plan. The same test is performed when knife sharpening is done by hand with a stone. After that, one pull on each side in the number 2 slot. Again, I had a burr, things seemed to be going well. Then I made 3 pairs of passes through stage 3, doing the left then right side, as recommended in the manual. Did a cutting test on some veggies. Wow, that thing was SHARP. Definately a better edge than you get from the factory on say, Henckle's or Wusthof's knives. I think my Shun and Kasumi knives were as sharp or sharper from the factory, but this was a nice, sharp, effortless, smooth-cutting edge, and it was equally sharp along the whole length. It's theoretically possible to get a sharper edge, but practically there is nothing left to desire from the edges I get from the Chef's choice, and I will happily be putting that knife back to regular use.

I asked my mom to have a go with the knife, and she was amazed at the edge I got from the same device she'd been using on her knives. It turns out she wasn't using it as recommended by the instructions. For example, she was making multiple pulls on the same side of the knife (you're supposed to alternate, left and then right side), and probably making too many passes. I redid the edges on all our knives, and now they are just awesome. I do feel like I got slightly better results the second and third time I used the machine. Splitting hairs, but it's safe to say it gets better as you get the hang of it. As other reviewers have said, the best thing would be to practice on something inexpensive or throw-away to be absolutely safe. I didn't really have anything that fit that bill, so I just jumped in with a good knife.

So, bottom line is this sharpener can do a very good job, but it's a tool. Like any tool, it needs to be used properly. It may be electric, and it may be a lot easier and faster than a whetstone, but it doesn't have a brain. That's what you're for, so read the manual, make some practice pulls with the power off, sharpen a cheap knife first if you can, and then enjoy. Don't worry about a reviewer who says the thing jams if you try to push the knife against the wheels and thus doesn't sharpen the knife. The manual says not to do that, just use enough pressure to make contact with the wheels.
