This is the best set of knives that you will ever own! Be careful though, they are also the sharpest. I look at it this way: I am a skilled chef, not by trade but by hobby. This set of knives is the only set I will need for the rest of my lifetime, not quite so with the Henkel set that I bought about 8 years ago. Another thing, do not pay this amount for these, even though they are worth every penney. I got my set on Ebay, & only paid $675 for a NIB 9 pc. set - not 2nd's either. You will have to watch for true auctions, as most all Shun Elite listings are buy-it-now, but it is worth the wait & also the savings, especially in these economic times. I hope this was helpful!

I think at this price range it goes without saying that this knife is extremely sharp with great edge retention and constructed to last a lifetime.What sets this apart from the shun classic series is the SG-2 steel in the blade, it is a 'powdered steel'.Basically what this means is that the molecular structure of the steel is much more uniform than in regular steel, which allows it to be extremely strong and yet not too brittle.

Aside from the technical details, this santoku has excellent ergonomics and looks simply stunning.When you cut with this knife it feels like you are holding a fine work of art, and rightly so.

There are many who balk at paying this amount of money for a single knife, but personally I would rather have 2 or 3 outstanding knives that I will cherish for many years to come rather than a whole set of knives which are just good or simply average.

First and foremost, let me start this review with a few general notes...

I am NOT a professional chef- I work in finance.I am a cooking enthusiast who decided to get serious about my kitchen.I admit that my needs are vastly different from those of a culinary professional.

That said, I must mention that reviews are great but I highly recommend going to a local kitchen supply store that will allow you to test drive knives.

Just about every celebrity chef has his or her own preference- I first heard about Shun knives from Alton Brown, who uses Shun Classics.I happen to prefer the Elites and my brother swears by Wusthof.The other reviewer of this item prefers Global.

The reason for the wide variety of opinion is that buying knives is a very personal thing- what's right for one might be very wrong for another!The only way to ensure you are happy with your investment is to take each for a spin and decide for yourself.

One more general word of wisdom- don't buy a set unless you would buy each and every component independently.Manufacturers have a bad habit of including one or two items that you really don't need, like a tomato knife or three different sizes of utility knife.Common sense says don't pay for the extra knife/accessory you don't need and therefore won't use.

Now, let's review this knife...

At $220 it should go without saying, but I'll say it for the sake of being thorough: this knife is sharp, *extremely* sharp.However, my personal feeling is that when you reach these high end price tags, you will find that all of the major brands will give you an adequately sharp blade.Beyond that, you need to concern yourself with edge durability and comfort.

As for durability, I'll say again that at this end of the price range you should naturally expect to get a knife that will last decades- no matter what brand you buy.The differentiator here has little to do with whether or not the knife will break, but rather how often you'll need to hone and sharpen your blades.(Honing and sharpening are NOT the same thing.)

While I haven't owned this knife long enough to make promises regarding the edge durability, the SG-2 alloy used in the Shun Elite will supposedly hold it's edge for quite a long time- even longer than the VG-10 used in the Shun Classics.If true, this would mean you could expect to get more cutting done between honings.Again, I can't vouch that this is true but that is the expectation Shun has set.

Finally, we come to comfort- you just have to feel comfort for yourself, but here are a few of my thoughts.Let me start with the comfort factors I *didn't* like about the competitors:

Global: Weight & handle length.For me, the Global was just too light.It is a proverbial feather.I fully understand that this would be a huge benefit were I chopping, dicing, and mincing for hours every day- but I don't.And since I'm a somewhat burly fellow, the lack of heft was disorienting for me.The handle is also a little on the short side for my big hands, which left the end of the handle bumping into the inside of my palm.

Wusthof & Henckels: Weight & handle shape.Both of these German-made knives are like battle axes.Holding them, I felt that if raging barbarian hordes stormed my kitchen I would be able to defend myself by wielding a Wusthof/Henckels as a broadsword and my dutch oven lid as a shield.They both seemed to be strong on power and brute force at the expense of agility and nimbleness.The handles felt quite boxy and lacked any elegance to their touch.(The Henckels was a little smoother than the Wusthof but both were very boxy.)

Now for what I liked about the Shun...

The handle was curvaceous, contouring to the peaks and valleys of my fingers and palms.The length was just right so that the knife felt perfectly balanced in my hand.The weight was neither too heavy nor too light.I felt like I could muster enough force to chop through anything, yet maintain grace and control while doing so.I attribute this to the thin 16 degree edge of the Shun, as opposed to the "normal" 22 degree edge of most knives.

While the Classic and the Elite had different handles, both were quite comfy and ergonomic.The winning element of the Elite over the Classic was the ambidexterity of the handle.You must choose either right or left handed with the Classic, which is a problem for me since I'm a lefty and my wife is a righty.In the end, settling on the Elite was a very easy decision for me but it could not have been made without holding and cutting with each knife myself.Even if everything I have just described resonates with your personal tastes please please please make sure you go out and try before you buy.

Admittedly, I did not purchase from Amazon but not because of price!There was actually no material price difference between Amazon and my local store.I simply felt honour-bound to buy from the folks who allowed me to test drive the knives.

The knives have great reviews from what i researched. When I held it there was a nice balance and i liked that it was about half the weight of the Shun Classic but not as light as the Gobal knives. Two of my favorite brands.

It's at least $60 cheaper here than most other websites and it costs equal or more just buying open other places since they don't all offer the Elite line in the nice bamboo box for gifts. If you're canadian you could pay $100 more just on the Santoku knife retail.

I was thrilled when I received this knife. I had previously purchased a Shun santoku and a paring knife, and wanted to find out how much better it really gets than these.

Out of the box the knife is very sharp. It's also very light, it's reminiscent of a straight razor on a knife handle. The handle is comfortable, and a bit bigger than I was expecting from another review- it's probably 15mm in diameter on average.

I sliced through onions just to test it out, it did a great job, with none of the diced-onion-stuck-to-blade issues that I had with my Henkels set. It took about 1/3rd the effort of my normal Shun knives (in good condition) to cut the onion. I cut potatoes next, and again, it was great. My wife and I had dinner plans, so I left my lovely knife alone till the next day.

The next morning I wanted to try something I had seen on Iron Chef America, I was going to remove the top of an egg with the knife... I knew my Henkels couldn't comfortably do this, from a previous attempt.

It probably took me 5 minutes, but I was successful... at a cost. My knife was now dull- apparent from looking at the blade with a light opposing the knife.

I thought, initially, that it might just need to be honed, so I broke out my F.Dick Multicut Steel, and attempted to correct the blade. 3 things here: 1) This didn't help, and 2)The SG-2 steel is so very hard, it basically ignored the honing. Every other blade I have would respond in some way to this steel, but not this one... and in my increasingly enthusiastic honing, I managed to scratch the laminated layers of steel (on the sides of the SG-2, The SG-2 itself showed no wear no matter what I did).

I was at a crossroads, what do I do with my freshly damaged knife? I could send it to Kershaw, but it would take weeks to get back, and I'd end up paying for shipping. So, figuring I would make other mistakes with knives eventually, I purchased a Spyderco Sharpmaker 204. This brought the blade back to factory condition nicely. Now I'm very happy with the blade, and am considering others in this line.

If your standard Wusthof is a Hummer - heavy duty and built for off-roading, the Shun is a Lamborghini, built for speed and precision. And just like you wouldn't take a Lamborghini out to the woods and try to "man it up," Shun is not designed for hacking through bones or joints like an axe. If you treat these knives like the high-quality investment they are, they will perform precision feats the likes of which no Wusthof could ever hope to match.

I own both wusthof-trident and henckels sets but this is my favorite knife.I wasn't sure if a 10 inch was too large and unwieldy but this knife is beautifully balanced and so light weight that I have had no problem.Another great featuere isthe fact that it is one solid piece so there is no yucky gunk that gets trapped in the haft or hinge area.
It sharpens very easily on a hardware store whetstone and for the finicky there are cheap knife guides available from the manufacturer to guarantee that you have the correct angle when grinding and sharpening.
If you want light weight with a very nice edge in combination with easy maintenace I would choose Global over either Wusthof or Henckels.For the style conscious -- it is very cool looking indeed.
