2 blades, in theory, allows you to rock-chop twice as fast, but it did not quite work out that way. The value of this knife is primarily one of novelty: you can amaze and impress your friends.
This thing is too clumsy to be very efficient. It was kinda hard to use very quickly on herbs or leaves or vegetables, so it did not go noticeably faster, because I kept having to slow down. It felt really strange. Perhaps, with some practice, I may get used to the feel of this knife, and it could become a wonderful tool. However, I think I am going to consign it to the junk drawer. Also, that is another problem: it is a very good, very sharp chef's knife (high-carbon, stainless-steel from germany, so the blade is like the brands with 4 stars or the one with a trident), and storage is a problem; where do you put a thing like this? I will have to use 2 edge guards, one on each blade.

I found this knife while browsing on the Amazon site. I have yet to see any reference to a 5" Katana nakiri knife on the Calphalon site. This is maybe my sixth Katana knife, and I really love each of them. I have not had any of the rusting problems mentioned in several reviews. The knives out of the box are the sharpest I have seen. I really like the balance and the wide tapered bolster, which helps remind the user to grip these knives properly. I generally clean my knives fairly shortly after use, but it seems that is the best way to care for good cookware and cutlery. The size and balance of this smaller nakiri is excellent, and it is a great vegetable mini-cleaver. The nakiri lends itself to a slightly forward stroke when slicing and chopping, and it works fine. The price is way out of line on the low side compared with other Katana knives. I have been buying and using them on a piecemeal basis, and I really like each knife I have bought with the exception of the serrated slicing knife. For some reason, it seemed to shred delicate items rather than saw cleanly. I returned it. The first one I got was the 6" chef's knife, and it has been one of the best short chef knives I have ever used. It has maintained its very sharp edge for well over a year, and, again, not a hint of rust problems. Other than the serrated knife, I would recommend any of those I have bought and used, including the 8" chef knife, the 3.5" paring knife, the 9" bread knife, and the 5.5 inch honesuki.

It is indeed a diamond steel, but the diamond is so rough that it actually makes my knives duller.The main purpose of a sharpening steel is to re-align the blade.Leave the sharpening to the pros.

Pros:
It will slightly sharpen the trash knives you have kicking around in a drawer

Cons:
Ruins the edge of good knives.

With time the diamond might wear down to a useable degree, but for this much money I want something that works out of the box, not something that might take months to be able to be used as it should

I've been in the food service industry for many years, and have used countless brands of knives. For home use, I've used many of the top brands including Henckels, Wusthoff and Kershaw. The Calphalon Katana Santoku is simply the finest kitchen knife I've ever owned.

The razor sharp blade retains its edge amazingly well, with minimal sharpening steel work. The knife is well balanced and light and a joy to handle.

Hand washing and drying are a must with a tool as fine as this.

I received this knife as a gift.It cuts very well and is extremely sharp.I very much like the way the knife feels in my hand, but it is a bit small for people with large hands.I am giving this product 3 stars because there are a few blood spots that did not wash out and the knife now looks like there a few faint rust marks.

This is a VERY sharp serrated utility knife that glides through tomatoes with ease.I've nicked my fingers a few times with it and have learned to be more careful.Since you can't sharpen serrated knives very easily, I like having the damascus steel knowing it'll hold its edge for quite a while.

I spend a lot of time in the kitchen. The meals I prepare are complicated and often include a good amount of sliced vegetables.I have two Santoku knives and have found myself using this knife more and more for my preparation work.

PROS:
-Great feel, perfect balance
-Sharp easily maintained edge
-Heavy enough for the big stuff (squash and pumpkins)
-Balanced enough for the small stuff (garlic and ginger mincing)
-Works great whether you hold the handle (like I do) or the blade (like they show you in some cooking schools).If you are a blade holder, then you'll love the feel of this thick backed `clever' like knife!

PROS/CONS:
-You have to hand wash and dry this knife immediately after use, but you should be used to this with any high end knife (wouldn't want to ruin your edge in the dishwasher...)
-It's a bit expensive, but then, it's very well made
-Thicker then a Santoku, not good for cutting meat, but it is not advertised or made for that purpose

If you don't own a Santoku knife, then do yourself a favor and get a Santoku first.You'll find the diversity and utility of a Santoku unmatched regarding preparation cutlery!If, however, you're like me, and have a variety of knives, then this knife is a GREAT addition to your collection.
