This knife is well balanced and proportioned perfectly for most cutting operations. I Love the ease with which it slices even tough items (of course I always give it a light swipe or two with a good steel before using). I have owned 1 of these knives for the past year and I still reach for it first amongst all the other knives in my kitchen. There is really only a couple of instances that it is not my first choice and that is when I am about to put a world of hurt on some poor defenseless piece of meat (with bones in it) or when I am gonna' smack the daylights out of a coconut shell to break it in half (for those operations, I prefer my cleaver!). I'm sure that if you purchase one of these knives, you won't be dissapointed! I know I'm happy with mine... REALLY HAPPY!

cheap, light weight, quite flexible, doesn't hold a sharp edge very well- but what do you expect from a cheap knife? I bought it because I liked the shape!
Use it, abuse it then throw it away or sell at your next "I'll never do it again" garage sale.

I just got this on friday. Designed for slicing roasts and other large cuts of meat, it has distinct limitations. It is very long, and has no tip, so don't try and use it for any sort of chopping, only slicing as recommended. When carving a flank steak against the bias, it did a wonderful job, allowing me to create thin and even slices, much thinner than with a (non shun) carving knife I have, or than what I can do with my shorter shun knives. The ability to cut in a single stroke reduces the tearing that occurs to meat, losing less juices. Don't try and carve turkey with it, as the rounded tips is awkward. And it does a mediocre job on bread, due to no serrations. However, on roast beef, ham, pork shoulder or large steaks, nothing can do a cleaner job. Looks great when cutting at the table too, and the hollows really do help stop the meat from sticking.

The problem with this one is that you have to go through the rough and the fine stone at the same time, there is no separation, but the end result is good for me (for now, until they come with a better one)

Kershaw is famous for knives, and they've been making knives for a long time. We've had this knife (and another Kewshaw slicer) for a long time, and so far there's little to gripe about.

The good:

The handles are comfortable and easy to hold on to when your hands are slippery. The blade has a nice profile to it (like a forged knife) and is weighted well, even without a bolster. You might mistake these for commercial-grade knives with their utilitarian styling (lots of plastic). Made in Japan. Kershaw's 9900 series knives are made in Japan by the KAI Group (in Seiki), who are known for making very good knives.

The not-so-good:

The handles. They're not wood, but there are places where food can get caught and cause bacteria growth, especially around the bolster (where the blade meets the handle). The blades. The steel is questionable. It doesn't hold an edge well, and despite the claim from Kershaw "shaving sharp," they weren't. The steel is hard to sharpen and can't be sharpened to razor sharpness like forged, or high quality stamped knives. There were corrosion issues with this knife also. I take good care of it, and it developed pits in the blade. Not good. Our Henckels and Cutco knives haven't pitted in over 8 years of constant use.

They're cheap, and that's good. The Japanese made great knives! Just take good care of them and get these professionally sharpened regularly.

This is my third pair of kitchen shears.The first was $10 and lasted a week.I thought the second pair was just fine until my Shun shears arrived.These cut well and are also very smooth while cutting.They fit my hand nicely. I can really feel the difference in quality.These can perform different functions -- opening bottles, jar opener, nut cracker -- one blade has a curve in it to accomodate bone.I love that they are dishwasher safe.

I probably wouldn't have purchashed these if I were not completing a Shun set.But now that I have them, this is what I should have been using all along.

This is my first single-bevel knife of Japanese design and I am very impressed. It came out of the box with a very sharp edge, and the excellent, relatively hard steel holds this edge very well. The concave "flat side" allows the knife to pass through foods much more easily than a conventional knife. One of the first uses I put it to was dicing a bell pepper. However, it was so easy to produce perfect, paper-thin slices that I got carried away and it came out as brunoised instead.

Some reviewers talk about the small size of the handle, I just do not see it that way. I have larger than average hands, easily being able to palm a basketball, and as far as I am concerned this is one of the most comfortable knives that I have ever used. The size is not a problem at all and it has a good feel as well.

Neither do I find the back of my knife as having sharp edges, even though this complaint has come up a couple of times. Quality control may vary, of course, but my knife is practically perfect.

I highly recommend the Wasabi by Kershaw 6.5-Inch Nakiri Knife.
